Minions themed Pina Colada ice lolly – Yum!

Minions theme Pina Colada Ice Lolly - Ta DaReady for a tasty Minion-themed treat? To celebrate the launch of the hilarious Minions movie (the Despicable Me prequel), Irish Artist Marjolein Wouters came up with a brilliantly chilly idea that the kids can make themselves… a Minions themed ice lolly, pina colada flavour – without the rum, of course!! The Minions Ice Lollies I made based on Lein’s instructions are admittedly kind of weird looking, but I am NOT going to apologise for them because…

1) The kids were delighted and said they were “the cutest little guys EVER”… so much so that they named theirs.

2) Mums everywhere will love me now because while they are super healthy, organic and suitable for vegans, the kids still think that they are a treat worth fighting over.

Ready? Here’s how to make Minions themed Pina Colada ice lolly treats for those rare sunny days…

STEP 1 – Mix coconut milk with pineapple juice to make your creamy (non-alcoholic!) Pina Colada mixture.

You can just use pineapple juice on its own if you prefer, but as a rule we try and steer clear of straight juice. Plus the coconut milk gives it a gorgeous creamy texture when it’s frozen and is really good for you! We didn’t bother measuring it out – instead we just kept mixing until the colour looked right!

STEP 2 – Make the top of the Minion’s head

Minions theme Pina Colada Ice Lolly - Step 2Pour a tiny bit of the Pina Colada mixture into an ice lolly mould. In ours, it was about 3 tablespoons of Pina Colada in each mould. This will be the top of the Minion’s head. Pop it in the freezer until it’s part-frozen. You want it to be a little firm or slushy, not hard. In my freezer this took about 2 hours.

STEP 3 – Add the Minion’s eyes!

Slide the two halves into the ice lolly mould and push them a little into the part-frozen Pina Colada mixture. You want the cut side of the blueberry to stick to the wall of the ice lolly mould. Minions theme Pina Colada Ice Lolly - Step 4 Put them back in the freezer to harden. They don’t need to freeze completely solid – just enough so that the eyes don’t float around when you add the rest of the Pina Colada. I’d recommend at least 15 to 20 minutes.

STEP 4 – Make the Minion’s body

All you need to do now is fill the rest of the ice lolly mould up with Pina Colada mixture, and pop it back into the freezer. If you want to get creative, you can try adding a little mouth (try a quarter blueberry), or even make a whole mashed blueberry slurry to look like overalls. We like to keep things simple, though, so it was just funny little eyes for us!

STEP 5 – Wait for the sun to come out and enjoy!
